I wanted the jammy berry punch of cobbler without turning on the oven. The toasted crumbs make it feel like the real deal.

Story

Some days you want dessert right now, not after a bake time and a cooling rack. This is my cheat code: quick berry sauce, thick vanilla shake, and a little crunchy topping so it reads like cobbler. The first sip is cold and creamy, then the berries hit and it suddenly feels like summer. Keep it messy and generous, it is that kind of treat.

Instructions

  1. Make the swirl: simmer blackberries, sugar, lemon juice, and salt in a small saucepan, stirring and mashing, until thick and glossy, about 6 to 8 minutes. Cool 5 minutes.
  2. Toast the topping: toss crushed cookies with melted butter, then toast in a dry skillet over medium heat until fragrant and lightly browned, 2 to 3 minutes. Cool.
  3. Blend the base: blend ice cream, milk, and vanilla just until smooth and thick, 15 to 25 seconds.
  4. Stripe the glass: spoon a little blackberry sauce around the inside of two cold glasses.
  5. Pour and swirl: divide the milkshake, then drizzle the remaining blackberry sauce on top and gently swirl with a spoon.
  6. Finish: top with whipped cream if you want, then shower with toasted crumbs and serve immediately with a spoon and a straw.
