- 1 pound fresh green beans, trimmed
- 6 slices thin-cut bacon, halved crosswise
- 2 tablespoons Dijon mustard
- 1 tablespoon maple syrup
- 1 teaspoon apple cider vinegar
- 1/4 teaspoon garlic powder
- 1/4 teaspoon black pepper
- 1 tablespoon chopped fresh parsley
- 1 tablespoon olive oil
Instructions
- Heat the oven to 425 F and line a rimmed baking sheet with foil or parchment.
- Toss the green beans with olive oil, then divide them into six small bundles and place each bundle across a bacon half.
- Wrap the bacon around the center of each bundle and place the bundles seam-side down on the baking sheet.
- Whisk the mustard, maple syrup, vinegar, garlic powder, and pepper in a small bowl.
- Roast for 15 minutes, brush the bundles with half the glaze, and roast for 5 to 7 minutes more until the bacon is crisp and the beans are tender.
- Transfer the bundles to a platter, brush with the remaining glaze, and finish with parsley before serving.
