Inspired by fruit-forward bourbon highballs and the spicy lift of fresh ginger. The apricot and lemon balance is an original Tastelicious build.
Story
Theo likes a cocktail that tastes like it came from a good motel bar, not a chemistry lab. Apricot brings the sun, bourbon brings the road dust, and ginger keeps the whole glass from getting sleepy. Shake it hard, top it high, and take the first sip before the bubbles disappear.

Ingredients
- 1 tablespoon apricot preserves
- 2 ounces bourbon
- 3/4 ounce fresh lemon juice
- 1/2 ounce ginger syrup
- 2 dashes Angostura bitters
- 3 ounces chilled club soda
- 1 cup ice
- 1 dried or fresh apricot slice
Instructions
- Add the apricot preserves and lemon juice to a shaker and stir until the preserves loosen.
- Pour in the bourbon, ginger syrup, and bitters, then fill the shaker with ice.
- Shake hard for 10 seconds until the outside of the shaker feels frosty.
- Double-strain into a tall ice-filled glass to catch any apricot fibers.
- Top slowly with club soda and give the drink one gentle lift with a bar spoon.
- Garnish with an apricot slice and serve immediately while the fizz is lively.
Chef Tips
- Warm the preserves for 5 seconds if they are especially thick.
- Use a spicy ginger beer in place of club soda for a sweeter, longer drink.
- A large cube melts more slowly if you prefer a rocks-style pour.
- Chill the glass first for an extra-crisp finish.
Cook's Notes
- Double-strain for a clean drink because apricot preserves are pulpy.
- Keep the soda cold and add it after straining.
- For a lower-proof version, use 1 1/2 ounces bourbon and extra soda.
