An apple-cheddar snack board becomes a warm, creamy egg toast with a honey-mustard edge.
Story
Casey loves a breakfast that feels special without asking for a second pan. The apples get just enough skillet time to turn tender at the edges, while the cheddar melts into the soft eggs and toast. It is a bright little plate for a slow Saturday or a breakfast-for-dinner rescue.

Ingredients
- 4 large eggs
- 2 tablespoons whole milk
- 1/4 teaspoon kosher salt
- 1/4 teaspoon black pepper
- 1 tablespoon butter
- 1 small crisp apple, thinly sliced
- 1 teaspoon honey
- 1 teaspoon Dijon mustard
- 4 slices sourdough bread, toasted
- 1/2 cup shredded sharp cheddar cheese
- 2 tablespoons chopped chives
Instructions
- Whisk the eggs, milk, salt, and pepper in a medium bowl until the whites disappear.
- Melt the butter in a nonstick skillet over medium heat. Add the apple slices and cook for 2 minutes per side, until lightly golden.
- Transfer the apples to a plate. Add the eggs to the same skillet and stir slowly with a silicone spatula for 2 to 3 minutes, until softly set.
- Mix the honey and Dijon in a small bowl. Spread the mixture over the warm toast.
- Divide the eggs among the toast, top with the cheddar, and return the toast to the skillet for 1 minute, covered, to soften the cheese.
- Finish with the warm apple slices and chives. Serve right away while the eggs are creamy.
Chef Tips
- Take the eggs off the heat while they still look a little glossy because they will finish setting on the toast.
- Slice the apple thinly so it softens quickly without losing its fresh bite.
- Try pear in place of apple, or use pepper jack instead of cheddar.
- Store the components separately for one day and assemble fresh.
