  2. Melt the butter in a nonstick skillet over medium-low heat. Add the apple and cook for 2 minutes, then pour in the eggs and stir until softly set.
  3. Brush one side of each tortilla with the melted butter and maple syrup mixture.
  4. Place a tortilla butter-side down in a clean skillet. Add cheddar, half of the egg mixture, and pecans if using, then top with more cheddar and a second tortilla.
