Inspired by the honey-mustard salmon I used to order when I wanted something light but still satisfying.

Story

Salmon nights are my trick for making a regular Tuesday feel a little nicer. This glaze is sweet, tangy, and fast, and it makes the whole kitchen smell like something good is happening. I love that the green beans get a little garlicky and soak up the sauce too. If you have lemon, use it, it wakes everything up.

  1. Whisk Dijon, honey, soy sauce, and lemon juice in a small bowl. Set aside.
  2. Heat olive oil in a large skillet over medium-high. Season salmon with salt and pepper.
  3. Sear salmon, flesh side down first, until browned, about 3 minutes. Flip and cook 2 minutes more.
  4. Push salmon to one side. Add green beans, butter, and garlic. Cook, tossing, until beans are crisp-tender, 6 to 8 minutes.
  5. Pour in honey mustard sauce. Simmer 2 to 3 minutes, spooning glaze over the salmon until it flakes easily.
  6. Finish with lemon zest and black pepper. Serve hot with extra sauce from the pan.
