Some nights I just want dinner to happen without a lot of thinking. Pasta and pesto are my safety net, and browning a little ground turkey makes it feel more like a full meal. The zucchini ribbons soften into the sauce and add that fresh, green bite. It is cozy, quick, and the leftovers are actually great for lunch.

  1. Bring a pot of salted water to a boil. Cook pasta until al dente. Reserve 1/4 cup pasta water, then drain.
  2. Heat olive oil in a large skillet over medium-high heat. Add ground turkey, season with salt and pepper, and cook until browned, 6 to 7 minutes.
  3. Add the zucchini ribbons to the skillet and cook 1 to 2 minutes until just softened.
  4. Lower heat to medium. Stir in pesto and reserved pasta water to loosen the sauce.
  5. Add the drained pasta and toss until coated. Stir in Parmesan.
  6. Taste and season. Serve with extra Parmesan and red pepper flakes if you like.
