A simple vinegar-free slaw built around lime and chili for bright, clean crunch.
Story
I keep cabbage in the fridge because it lasts forever and always saves dinner. When something rich hits the table, this slaw is what I want on the side. It is bright, crunchy, and not weighed down by mayo. I toss it together while the main cooks, then I forget about it until it is time to eat.

Ingredients
- 4 cups shredded green cabbage
- 1 cup shredded red cabbage
- 1 small carrot, grated
- 2 tbsp lime juice
- 1 1/2 tbsp olive oil
- 1 tsp honey
- 1/2 tsp kosher salt
- 1/2 tsp chili flakes
- 1/2 tsp ground cumin
- 2 tbsp chopped cilantro (optional)
Instructions
- Add cabbages and carrot to a large bowl.
- Whisk lime juice, olive oil, honey, salt, chili flakes, and cumin in a small bowl.
- Pour dressing over the cabbage and toss well.
- Massage the slaw with clean hands for 30 seconds to soften slightly and help it take on flavor.
- Taste and adjust with more lime, salt, or honey.
- Let sit 5 minutes, toss again, then serve, add cilantro if using.
Chef Tips
- Bagged slaw mix works, use about 5 cups total.
- Massage is the trick, it makes it tender without turning it soggy.
- For extra kick, add thinly sliced jalapeño.
- Great as a topper for burgers, pulled chicken, or fish tacos.
Cook's Notes
- Toss again right before serving to redistribute the dressing.
- If it gets too tart, add another drizzle of honey.
- Keep leftovers chilled, they stay crisp 2 days.
