- 8 oz spaghetti or soba-style wheat noodles
- 3 packed cups baby spinach
- 3 tbsp soy sauce
- 1 tbsp toasted sesame oil
- 1 tbsp lime juice
- 2 tsp honey or brown sugar
- 2 cloves garlic, finely grated
- 1 tsp grated fresh ginger (optional)
- 1 tbsp neutral oil
- 2 scallions, thinly sliced
- 1 tbsp sesame seeds
- Chili flakes or chili crisp, to taste
Instructions
- Boil a large pot of salted water. Cook noodles until just tender, reserve 1/2 cup cooking water, then drain.
- While noodles cook, whisk soy sauce, sesame oil, lime juice, honey, garlic, and ginger in a large bowl.
- Heat neutral oil in a skillet over medium. Add spinach and a pinch of salt, toss 30 to 60 seconds until just wilted.
- Add hot noodles and spinach to the bowl with sauce. Toss hard, adding a splash of reserved water until glossy.
- Taste and adjust with more lime, soy, or chili.
- Serve topped with scallions and sesame seeds.

- Use spaghetti, ramen-style noodles, or udon, just watch cook time.
- Grate garlic on a microplane so it melts into the sauce.
