Inspired by the cottage-cheese-and-fruit breakfasts I make when the morning is moving faster than I am.
Story
When I do not feel like cooking, I still want breakfast to feel like breakfast. This bowl is my little cheat code. The lemon zest makes it taste bright, the honey makes it feel cozy, and the crunch keeps it interesting. It is also the kind of thing I can assemble half-awake.

Ingredients
- 2 cups cottage cheese
- 1 1/2 cups mixed berries
- 1/2 cup granola
- 2 tbsp honey
- 1 tbsp lemon zest
- 1/2 tsp vanilla extract
- 2 tbsp chopped toasted almonds
- Pinch of kosher salt
Instructions
- Stir cottage cheese with vanilla, a pinch of salt, and half the lemon zest.
- Divide the cottage cheese between two bowls.
- Top with berries.
- Drizzle with honey.
- Add granola and almonds for crunch.
- Finish with remaining lemon zest and serve right away.
Chef Tips
- If you prefer it smoother, blitz the cottage cheese in a blender for 20 seconds.
- Swap granola for toasted oats or crushed cereal if that is what you have.
- Use frozen berries if needed, thaw for a few minutes first.
- For extra protein, add a spoon of nut butter on top.
Cook's Notes
- For less sugar, skip the honey and rely on sweet berries.
- Add granola right before eating so it stays crunchy.
- Smooth cottage cheese by blending if texture is not your thing.
